Summertime is here and that means fresh fruits and veggies. Each Saturday the farmers market is packed with vendors sharing their labors. Around here you can toodle towards the center of Crawfordsville to take a little stroll down Pike Street. There is something about meeting up with the community for a cup of joe, fresh flowers and eggs or maybe local organic meats. Here in the kitchen we use many local farmers and vendors in our daily chores. We play with new recipes and take time to mix those up, using fruits and veggies that are easy to find and in season.
A simple way to get those daily nutrients in your diet is to mix a big salad with both fruits and veggies! Oh yeah, mix them all together. The flavors amazing. Strawberry season is upon us! Here is a quick and easy salad to get started.....
. . . . .
- 1 Avocado, pitted and diced
- 6 cups Baby kale, fresh (or spinach)
- 1/2 Red onion, small
- 1 pint Strawberries
- goat cheese
grilled chicken (make it a meal.)
Toss all ingredients together with your desired amount of dressing until combined. Serve immediately. drizzle with a light vinaigrette or balsamic.
and for extra flair...go outside, throw down a blanket and enjoy!
